Root Veggie and Microgreen Salad

Serves: 1 large salad
Vegetarian!

Ingredients
1 cup Microgreens
1/2 cup Grated carrots
and/or beets
1/4 cup additional finely sliced veggies such as:
Snow peas
Radishes
Onions
and/or Chives
1/2 cup Finely chopped fruit such as:
Apples
Pears
Berries
And/or oranges
1/4 cup Sliced tomatoes
1/4 cup Feta cheese
1/4 cup Sunflower or pumpkin seeds
Pecans (optional)
Garbonzo beans (optional)
Oil for dressing
Vinegar for dressing

Step by Step Instructions
  1. Wash and spin or press the microgreens to drain them of excess liquid. Wash and slice the other fruits and veggies.
  2. Mix the microgreens, fruits, and veggies together.
  3. Top the salad with seeds, nuts, and feta
  4. Add oil and vinegar for dressing and mix the salad again if desired.
